“I remember the first time I smelled good spirit. This was a sketch I made of the still at Roseworthy Wine College — I went over to Adelaide and spent about a week there, and met two men named Peter Cannelli and Alex Sammut. They were making a fine liqueur brandy with the students on the side, as part of the college.

It was there I smelled a vat of spirit for the very first time in my life. He lifted the lid and I thought, ‘Well, okay… that’s spirit.’ I didn’t know what I was smelling. Turns out that was what happens if you distil with bad wine. Then he lifted the lid on a vat they had just distilled there at the college. The thing I remember most is this lovely, honey-sweet smell. And that has always stayed with me: that you can’t make a good spirit out of bad wine — or bad wash.”
