“Our first few barrels were unpeated but we were encouraged by Ron Sutherland, Laird of the Hobart Gillies Club, to make a peated whisky. Initially we were able to buy ‘Tasmanian Highland’ peat from a local horticultural supplier, and with an idea from Lyn we developed a process of peat smoking the malted barley we purchased from Cascade Brewery.
A short time later we were told that the Tasmanian peat was no longer available and we would have to purchase peat from Lithuania. Whilst it may have been good peat, it was not from Tasmania and it was important to us to be using Tasmanian ingredients as much as possible. After some investigation we managed to contact the man who held the lease over Brown Marsh Bog in the central highlands and learnt that as he was about to relinquish his lease, he would be very happy to transfer it over to us.”
