“My father-in-law Max introduced me to drinking single malt whisky; I enjoyed drinking whisky, but had no other thoughts or ideas about it. One day we caught a beautiful brown trout and Max pulled out a bottle of single malt whisky. We probably drank enough of that to say silly things like, ‘I wonder why someone isn’t making whisky in Tasmania?’

It could have finished there, but fate and chance are really amazing things here in Tasmania. I think if I’d said those words in any other state in Australia this wouldn’t have happened, but here in Tasmania it’s amazing who’s connected to who. I remember mentioning it to a friend one day who owned a bottleshop in Huonville. He phoned up an old friend, Fred, who’d worked for a distillery in Scotland. I went around and Fred opened up a bottle of whisky and we sat talking about his wonderful days at Glenfarclas. After that conversation he said ‘Well, you shouldn’t talk to me, you should talk to my son who used to work for a company that makes stills.’ So I went and saw his son, who also opened up a bottle of whisky, and this is just what it was like! He started drawing up a design for a distillery for me, and from there it just seemed to snowball.

By chance my mother-in-law was reading out a notice for an auction coming up in Hobart; a mahogany table, bentwood chairs, a copper pot whisky still…

I said, ‘Come on, we’re going to that auction. I don’t care what that still’s going for, I’m going to buy it!’ Again, fate and chance.

I got it for $65.”
