“These whiskies were a personal project. I wanted to push the boundaries and take risks, to be able to take my knowledge to the next level. To put it right out there and do things that haven’t been done.
We set about trying to make some pretty cool whisky. We wanted to test the formation of viscosity and feints, and how to manipulate them through fermentation. We did a 14-day ferment, which is something like four times industry standard length. I’m usually a pretty confident guy — I was not confident. I was 50/50 sure this wasn’t going to work, but it did. You can taste the flavour right to the very, very back of your palate; you don’t even know you’ve got tastebuds that far back, it’s insane. It’s one of the scariest things I’ve ever done from a work perspective, and what’s been really great is that we’ve been able to take that experimentation to the next level, and bring that back into our normal, everyday process.”

Volume 5 of the Revolution Release will go on sale May 5th, 2017.
Salted caramel, vanilla, cut grass, stewed fruit and some late smoky oak. Remains fairly high on the palate and quite forward. Some funky sweet lolly shop notes linger. Balanced and complex.
