A symbol of power and perseverance, the Fire Horse brings with it a year of unyielding spirit and connection. Inspired by the great migration of family and friends, this year's Limited Edition Tasmanian Single Malt is matured in select first-fill sherry and port casks, and finished in Seppeltsfield Tawny barrels, creating a whisky as rich and layered as the celebrations it was made for.

Crafted in Tasmania’s whisky super-climate, the Fire Horse Limited Release is as rich and layered as the stories woven into its design.
Designed by artist Chris Yee, this edition reflects journeys of connection – waves forming the Fire Horse, wood textures evoking Cradle Mountain, and flight paths in the sky symbolising reunion, movement, and homecoming.
“With the 2026 Year of the Horse design, I wanted to highlight the importance of natural elements, water and land shared in the mythos of both Asian and Australian cultures. From drawn sketches to digital applications, I visualised elements of fire, wood and water, all of which are part of the distilling process. The night sky illustration showcases the majesty of Cradle Mountain and abstract paths of journey, connection and travel that matter most at this special time of year.” - Chris Yee

Silky, rich and great depth
TASTING NOTES
Crafted in Tasmania’s whisky super-climate, this special release is matured in select first-fill sherry and port casks, creating a whisky as rich and layered as the celebrations it was made for.
Inviting aromas of nutmeg and pomegranate mingle with hints of smoke and praline, leading into a silky palate of dark chocolate, ripe stone fruits, and warm sherry richness, rounded by the taste of dates and pecan. The finish is smooth and lingering, revealing brandy custard and poached pears with a gentle touch of Tasmanian highland peat - a whisky to be savoured in moments that matter.
AROMA
Soft pear blossom with sweet, honeyed tea, rich caramel, and bursts of roasted quince.
PALATE
Orange spiced cake and apricot compote with juicy dried raisins, treacle sponge pudding and tender red dates.
FINISH
Hazelnut praline with glazed fruits, subtle new leather and light highland peat smoke.
SENCHA BLOSSOM OLD FASHIONED
60ml LARK Fire Horse Limited Edition
20ml Sencha Tea Syrup*
Stir all ingredients on ice. Strain into a tumbler over
a large ice block. Express oil from orange zest over
drink.
Garnish with a star anise pod, enjoy.
*Brew a pot of green tea for seven minutes (approx
400ml).
Strain out tea leaves and combine 1 cup of
sugar.
TOASTED FORTUNE HIGHBALL
45ml LARK Fire Horse Limited Edition
60ml Toasted Sesame Cordial*
Top with soda
Combine all ingredients in a tall glass with ice.
Garnish glass with toasted sesame seeds.
Enjoy.
*Heat a tablespoon of sesame seeds in a pan until golden and
fragrant.
Add 100ml of water, 50g caster sugar and a handful of
lemon zest and combine.
When cool, add a splash of brown rice
vinegar and a squeeze of lemon.
