Sea 06 - Tasman Tide

From Tasmania’s rugged coast, where salt-laden winds sweep inland and wrap the island in A briny mist, comes a whisky shaped by the rhythm of the sea. Resting in a first-fill Seppeltsfield Apera cask, this single malt – distilled from 60% peated malt – has breathed Tasmania’s maritime air for eight patient years.

In the quiet of the bond store, the cask carries whispers of the ocean, its oak seasoned by time and salt, its spirit deepened by peat and sherry sweetness.

The result is Cask LD2433 – Tasman Tide, a whisky as elemental as the coastline it echoes. On the nose, plump raisins steeped in treacle entwine with old oak and a drift of coastal air. The palate unveils sherry-soaked dates, dark chocolate and mulled spice, lifted by a delicate kiss of sea salt. A lingering finish of velvety toffee and roasted walnut fades with a final breath of umami depth and gentle peat.

Sea 07 - Coral Veil

Beneath Tasmania’s southern waters, forests of wakame kelp sway in secret rhythm, sheltering one of Australia’s richest and least-explored ecosystems. Inspired by this hidden world, Cask LD2450, Coral veil was distilled in 2017, matured eight years in a Seppeltsfield Tawny cask, and infused with wakame. This rare technique imparts subtle maritime character, weaving the ocean’s umami into the whisky’s heart.

On the nose, salted caramel mingles with grapefruit marmalade, an ocean breeze and a hint of camphor. The palate opens with maritime freshness, unfolding into maple syrup, blackcurrant richness and wakame sweetness. The finish lingers on honey-roasted almonds, tobacco leaf and a dry, iodine whisper – a layered reminder of the sea’s vast depths.

Coral Veil is a tribute to Tasmania’s underwater wilderness: mysterious, diverse, elemental – a whisky as wild and layered as the ocean depths.
