Crafted at our Cambridge distillery, aged in Port, Sherry, and some ex-Bourbon casks, finished in Frogmore Creek’s red wine barrels seasoned with Jean Pascal’s mince pie jus, this single malt whisky is a testament to the shared passion and artistry that define Tasmania and the warmth of the season.

This year marks the 6th annual release of the LARK Christmas Cask. Legend has it that a surplus of Jean Pascal’s exquisite fruit mince pie jus sparked a moment of creative inspiration at Frogmore Creek Winery. Not ones to waste such culinary artistry, they ingeniously chose to ferment it in a select red wine cask, simply to explore its potential. Enter Chris Thomson, summoned by Alan from Frogmore Creek, who recognised its promise as a unique whisky finish. Thus, Christmas Cask was born from community and friendship, swiftly becoming a cherished tradition at LARK over the past six years.
