Mizunara white oak is highly prized because the cost of logs is quite high since it often takes 200 years or more for a Mizunara tree to mature enough before it can be harvested for cask barrels. The Japanese government also restricts the felling of Mizunara trees under the age of 80, making this type of Japanese oak even more difficult to come by for barrel production.
This necessary passage of time imbues the wood with unique qualities that, in turn, impart extraordinary characteristics to our whisky.
Now in it's fourth iteration of the sold out Mizunara Oak Rare Cask Series, the fourth release is luxuriously floral, delicate and buttery, showcasing the exquisite complexity and depth of flavours imparted by Mizunara oak. Experience layers of leatherwood honey, citrus blossom, quince paste and warm almond croissant, lifted by a fine thread of white sandalwood . A luscious palate of Silky crème brûlée and golden sultana roll into kumquat marmalade, macadamia praline and a gentle white pepper snap. The finish lingers with toasted coconut wafer and ginger snap linger with dried apricot, crisp pear and a final brush of demerara syrup.
