Lark Head Distiller Chris Thomson has taken our Tawny-dominated Classic Cask and finished it in a single Australian Tawny cask, selected from Seppeltsfield Winery in the Barossa Valley. The result is a familiar Tasmanian single malt that quickly develops into a Tawny explosion of raspberry and blackberry, perfectly balanced with creamy caramel and a light dusting of cinnamon.
Aromas of rich tawny and dark chocolate mingle with warm, homemade apple and blackcurrant crumble. Notes of old oak, leather-bound books and toffee follow.
Creamy vanilla custard with a touch of our signature candied orange peel, followed by more rich toffee and oak.
The finish transitions from heavy notes of rich, dark fruit to airy remnants of oak and smoke, with a light dusting of cinnamon.
