Inspired by Bill Lark's journeys to Japan, and meticulously crafted with passion and precision, our Tasmanian Single Malt whisky is finished in rare and precious Mizunara oak casks, embodying a harmonious blend of two esteemed whisky cultures. Mizunara white oak is highly prized because the cost of logs is quite high since it often takes 200 years or more for a Mizunara tree to mature enough before it can be harvested for cask barrels. The Japanese government also restricts the felling of Mizunara trees under the age of 80, making this type of Japanese oak even more difficult to come by for barrel production.
This necessary passage of time imbues the wood with unique qualities that, in turn, impart extraordinary characteristics to our whisky.
Now in it's third iteration of the sold out Mizunara Oak Rare Cask Series, the third release is luxuriously floral, delicate and buttery, showcasing the exquisite complexity and depth of flavours imparted by Mizunara oak. Experience layers of coconut and sandalwood sweetness intertwine with maple-baked pears and heather honey. A luscious palate of peaches and cream unfolds into soft botanic oak and crystallised ginger, balanced by caramelised banana. The finish lingers with orange zest panna cotta, chocolate-coated coffee bean, and delicate pastry cream, kissed by a whisper of white pepper.

Nose

Palate

Orange zest panna cotta unfurls into chocolate coated coffee bean, with lingering pastry cream and a wisp of white pepper.
