This year's release, LARK honours the spirit of reunion - the journeys we take, the traditions we cherish, and the moments we share. Inspired by the great migration of family and friends coming together, the 2026 Fire Horse Edition celebrates the threads that connect us across time, place, and heritage.
Crafted in Tasmania’s whisky super-climate, this special release is matured in select first-fill sherry and port casks, creating a whisky as rich and layered as the celebrations it was made for.
Inviting aromas of nutmeg and pomegranate mingle with hints of smoke and praline, leading into a silky palate of dark chocolate, ripe stone fruits, and warm sherry richness, rounded by the taste of dates and pecan. The finish is smooth and lingering, revealing brandy custard and poached pears with a gentle touch of Tasmanian highland peat - a whisky to be savoured in moments that matter.

“The Knotted Tree and Golden Lark,” is a tribute to both the cultural richness of the Lunar New Year and the natural beauty of Tasman. Matured in select small first-fill sherry and port casks, this Tasmanian whisky offers a rich tapestry of flavours to mark the occasion.

Tasting Notes
Matured in select first-fill sherry and port casks, this Tasmanian single malt is rich, layered, and made for meaningful moments. Artist Chris Yee’s design weaves water and fire into the spirit of the Fire Horse to symbolise energy and movement, and the wooden textures honour the casks. Cradle Mountain anchors the scene, while flight paths in the night sky nod to reunion and return.
Nose
Soft pear blossom with sweet, honeyed tea, rich caramel, and bursts of roasted quince.
Palate
Orange spiced cake and apricot compote with juicy dried raisins, treacle sponge pudding and tender red dates.
Finish
Hazelnut praline with glazed fruits, subtle new leather and light highland peat smoke.
