The Still - LARK Distillery’s flagship whisky and cocktail bar transforms just in time for winter, reimagined as GOTHAM.

The iconic Hobart tasting room and lounge has long been celebrated for its atmosphere, service, and exceptional spirits collection.

Now, as GOTHAM, it will retain its Tasmanian heart while introducing a darker pulse. Launching with a brand-new food and cocktail menu, join us for a moodier and quietly rebellious experience.

Expertly crafted cocktails
The bar still runs on the LARK spirits we love, plus a new bespoke cocktail list, including a freezer-pour Sweet Manhattan, and LARK’s take on the Irish Coffee, highlighting this year’s DARK LARK release, and spiked with wattle seed, maple syrup, and coffee from GOTHAM’s neighbours at Hobart institution Pigeon Whole Bakers

Brand-new food menu
Come in and try Chef Benjamin Co-Pavier's menu of plates reminiscent of New York cocktail bars: shucked-to-order Tasmanian Oyster Co. oysters, Robbins Island wagyu skewers, crispy fried chicken, and a cheeseburger set to become Hobart's favourite late-night dish.

Live entertainment
Enjoy the entertainment synonymous with The Still including live jazz every Wednesday. A martini and oyster Happy Hour worth arriving early for. During Dark Mofo, revel in High Tea with Heidi (Saturday 12, Sunday 13, Saturday 19 and Sunday 20, 1pm-3pm), and a return of the Listening Lounge (Thursday-Saturday, 4pm-late).

You can find us at 30 Argyle Street, Hobart, inside the historic Mercury Print Room.

Do you offer food?
We have a new menu of bar snacks and plates available from 4pm.

Do I need to book?
Walk ins are welcome. For busier evenings, booking is recommended – especially for groups.

Are children allowed?
Children are allowed when accompanied by a responsible adult until 8pm.

Is the venue wheelchair accessible?
Yes – wheelchair access and table service are available.

Yes – the Gin Making Experience.
