Flavour Profile

A Single Malt Whisky with smoky orange peel, wildflower honey, coca nibs and lingering peat. A rare marriage of Cambridge Tasmanian Single Malt, finished in a parcel of vintage 1992 Para Vintage Tawny casks.

Nose

Oolong tea and Tasmanian peat, mingling with raspberry panna cotta and charred almonds, followed by aged parchment and cigar leaf.

Taste

Floral and smoky orange peel, giving way to spiced blackberry cobbler, wildflower honey, and cocoa nibs.

Finish

Deep, mossy peat and roasted malt linger, with a lasting and resinous fortified oak sweetness.

Behind the Whisky

For over a century, Seppeltsfield Wines in the Barossa Valley has nurtured what many consider the crown jewel of Australian fortified wine: the Centennial Collection, an unbroken lineage of single-vintage tawny dating all the way back to 1878.

The estate’s historic cellars brim with casks that have held decades, even a century, of Port, Tawny, Apera and Tokay, each one a reservoir of deep flavour and remarkable liquid history.

These rare Seppeltsfield barrels, selected not just for age but for the story they carry, are at the heart of LARK's celebrated Rare Cask Series. Each drop reflects the deep complexity, silky richness and fortified depth that only these historic barrels can impart.

It was on a fine day exploring the Seppeltsfield archives our Head Distiller discovered 16 special tawny port casks from 1992, which then carefully made their way to Tasmania, to finish our famous Tasmanian peated Single Malt.

Aged in first-fill Tawny, Apera, and Bourbon casks before being finished in rare 1992 Para Vintage Tawny casks, this Single Malt Whisky carries the essence of two legendary landscapes- the historic vineyards of South Australia and Tasmania’s wild, untamed spirit.
