"To announce the partnership LARK x Peter Gilmore curated a menu of iconic Tasmanian ingredients, fused with modern Australian and Asian flavours, and paired each dish to a specific LARK Single Malt, allowing each ingredient to shine on the palate.

The picturesque dishes included: Tasmanian rock lobster, uni butter enriched koshihikari rice, baby cucumber, pinstriped peanuts and umami broth matched to LARK’s award winning Chinotto Citrus Cask Single Malt Whisky. This was a remarkably crunchy and textural dish that showed off the purity and sweetness of shellfish.
