Each sip of LARK Classic Cask celebrates the time-honoured art of distillation, our rich legacy and the rebellious spirit of Tasmania.  

Handcrafted at our Coal Valley Distillery, Classic Cask 43% is a true labour of love from the second it leaves our stills to the moment the cork is popped. It features the citrus and rich plum pudding of the LARK house style with a hint of Tasmanian peat. Based on the original recipe from founder and Pioneer Bill Lark, and a whisky home to over 20 awards and international medals.

Born from rebellion and revelry, Classic Cask learned the rules, and broke them. This is where it started, it’s approachable, with a complex edge. This award-winning bottle in The LARK Signature Collection is signed by Founder Bill Lark, representing his mark on the new world of whisky. 

Brewed by hand and distilled with the intention of producing a heavy and viscous palate structure.  Double-distilled and aged in a considered selection of small casks. This is a new frontier, our island's own peat bog and post malt smoking process, creates a lightly peated whisky for a bold palate. This single malt whisky in The LARK Signature Collection is signed by Master Blender Chris Thomson, representing his mark on the new world of whisky. Best enjoyed by anyone, any way they like.​

This special single malt starts where our Central Highlands peat bog and the wild landscape meet. ​ ​

A wonderfully warming drop for the bold palate, where earthy peat and delicate florals transport you to the untamed.​ ​ Enjoy neat by the crackle of a roaring fire, or elevate your favourite cocktail with a delicate touch of smoke.

Post malt smoking is quite unique in the whisky world. Traditionally the barley is kiln dried after the malting process. Our barley arrives at our Tasmanian distillery already malted, so ours is a process of post malt smoking. We smoke 2 tons of malted barley with 100kg of our very own peat over an extended period. This style of peat smoked barley imparts a different flavour profile than traditionally peated whisky. Expect more chocolate and earthy roasted coffee notes to come through.​

Cask Strength 58% is shaped and carved by old-style LARK. It’s heritage and mastery with a brazen spirit, embracing the triumphs of the old world while marching fearlessly on to the new. 

A single malt with a strong port cask influence, giving rise to bold flavours of dried fruit and butterscotch, illuminated by sweet notes of Tasmanian highland peat.  Let the depth of character in this bold single malt come alive with a splash of water or over ice.

This is classic Cask in a pure form. Always blended on its own merits, giving the consumer an opportunity to discover and explore LARK at their preferred ABV, by breaking down with water at home or at the bar. Of course, as with all of our whiskies, it drinks way below the 58%ABV. Giving the whisky beginner an opportunity to experience a cask strength whisky without being overwhelmed by alcohol.
