Crafted in the heart of Tasmania, this special release is the result of passionate craftsmanship and shared artistry. Aged in a selection of Port, Sherry, and ex-Bourbon casks, then finished in Frogmore Creek’s red wine barrels seasoned with Jean Pascal Bakery’s Fruit Mince Pie jus, it’s a celebration of bold flavours and festive indulgence.
Moments gathered around the table, glasses raised in good company, the joy of sharing something truly special - this is what Christmas Cask was made for. From the first notes of rhubarb pie and brandy-soaked pudding to creamy coconut, marzipan, and spiced gingerbread, it unfolds like a Christmas feast. The finish lingers with fruit mince pie, cinnamon buns, orange frosting and a touch of peanut brittle.

GINGERBREAD OLD FASHIONED
60ml LARK Christmas Cask
5ml PX Sherry
3 Barspoons Spiced Ginger Syrup*
1 Dash Bitters
Stir all ingredients on ice. Strain into a rocks glass on a large piece of ice. Express orange peel onto the surface of the cocktail and garnish. Enjoy
*Heat water, caster sugar, grated ginger, cinnamon and allspice together in a pot until combined and richly aromatic.

CHRISTMAS PAVOLVA FIZZ
60ml LARK Christmas Cask
25ml Lemon Juice
10ml Simple Syrup
1 Barspoon Passion fruit Pulp
1/2 Vanilla Pod
1 Egg White
Soda
Lightly muddle the vanilla pod and passion fruit together in a cocktail shaker. Add all other ingredients except soda and whip together for a few minutes. Add ice and briefly shake. Double strain into a tall glass and slowly add enough soda to create a fluffy head to the drink. Garnish with a
meringue and enjoy.
Tasting Notes
The Christmas Cask celebrates the spirit of togetherness and Tasmania’s community coming together. Imparted with the essence of pâtisserie Jean Pascal’s fruit mince pies and Frogmore Creek’s red wine barrels.

Nose
Warm aromas of freshly baked rhubarb pie and rich Christmas pudding, laced with brandy butter. Mulled wine spices rise gently, with a delicate waft of cranberry shortbread crumble.

Palate
Luscious arrival of caramel and creamy coconut, balanced by the gentle spice of gingerbread and the soft, nutty sweetness of marzipan.

Finish
Long and warming, with layers of fruit mince pie and sticky cinnamon buns. Frosted orange cupcakes and a moreish note of peanut brittle.
