Our new portfolio is built around our signature house style – fortified depth, silky texture, sweetness balanced by the umami edge of apple-wood smoked water.
It’s bold, flavour-forward and unmistakably Tasmanian. Within the new Signature Collection, there’s a world to explore in each expression of our house style, each capturing the essence of our island in a unique way that makes LARK, LARK.
Crafted from our island home
Our House Style
Characterised by its rich fortified depth, offering layers of silky complexity, with sweetness and New World fusion umami. You’ll discover the most common flavour notes are mocha, baked orchard fruit and wisps of light umami smoke, all coming together to deliver a rich and balanced finish.
Our team of Whisky Makers taste the spirit up to 70 times throughout the whisky-making process. We mature in rare, fortified wine casks from Seppeltsfield Wines in the Barossa Valley – some with over 100 years of liquid history. We use a bespoke cask seasoning program built on PX, Tawny and Muscadelle. We expose our fermentation tanks to the wild micro-organisms of the Tasmanian air.
We smoke our water with local apple wood. We mine our own peat from Tasmania’s Central Highlands. None of this happens by accident. It happens because Chris and the team are relentlessly committed to getting it right.
Fire Trail No. 151
Built on the foundations of silky complexity and flavour-forward depth. Aged in rare Port and Sherry casks, finished in ex-Bourbon and American Oak wine casks.
On the nose you'll experience baked pears infused with golden caramel, vibrant citrus, and a delicate wisp of cedarwood. On the palate chocolate ganache over stewed mulberries seamlessly layer with vanilla custard and succulent apricot compote. A finish of dark cocoa-kissed hazelnuts meet velvety coconut cream, while luscious sultanas mingle with bush honey.
Devil’s Storm No. 183
The bold heart of LARK. Devil's Storm is built on depth, texture and Tasmanian intensity. A Single Malt with delicate Tasmanian peat smoke, aged in first-fill vintage Port and Sherry casks from our time-honoured partnership with Seppeltsfield Wines, finished in American Oak and our masterfully seasoned casks.
On the nose stewed plums steeped in wildflower honey, scorched orange and roasted pecans dusted with delicate cacao. On the palate, taste dark chocolate over sun-drenched blackberries, balanced by caramel fondant and perfectly charred peaches touched with refined peat smoke. A finish of old oak deepens into burnt maple syrup, with sticky toffee pudding and toasted sesame brittle leaving a lasting warmth.
Ruby Abyss No. 285
Ruby Abyss is a deeply complex Single Malt aged in 100% first-fill vintage Port and Sherry casks, courtesy of our time-honoured partnership with Seppeltsfield Wines, featuring a century-old Australian Port reserve.
With notes of dark fruits, caramelised brown sugar and delicate peat smoke. On the nose steeped pears in aged dessert wine, amber raisins, caramelised Demerara sugar, and a whisper of salted macadamia. Lush plum preserve folds through chocolate sauce on the palate, with buttery croissant layers and a drift of earthy peat. Deep fortified oak warmth lingers through spiced golden treacle on the finish, as candied quince and umami leave a velvety depth.

The name of each new variant is a sensorial representation of Tasmania, evoking our rich whisky-making paradise that inspires and informs our single malt and our bold New World spirit. Our numbering system isn't just labelling – it's serves as our recipe language, defining the key components of each whisky expression.
