In the wild's of Tasmania's deep west, Amongst the sphagnum moss of Lake St Clair, hides a frog no bigger than a grape. A frog that will spend its entire life amongst the same moss that our pear is pulled from. The Moss Froglet; the smallest amphibian living amongst the strongest whisky flavour.

Our Cambridge Single Malt Whisky, matured in a Barossa Shiraz Single Cask numbered #LD4825, beautifully showcases the distinctive peat character from our Central Highland Peat Moor

Release 01 from the Earth Chapter, "The Moss Hopper", celebrates LARK's Central Highland peat marsh, and its endemic froglet. Yielding just 368 bottles, this whisky features distinctive Tasmanian floral peat, ripe cherries, honeysuckle, and chocolate notes.

In the wilds of Tasmania’s deep west, amongst the sphagnum moss of Lake St Clair, hides a frog no bigger than a grape. A frog that will spend its entire life amongst the same moss that can be found at our peat marsh. The Moss Froglet; the smallest amphibian living amongst the moors, protecting the peat from which we draw our unique and complex range of flavours found in LARK Tasmanian Single Malt Whisky.

Our Cambridge Single Malt Whisky, matured in a Shiraz Single Cask Numbered LD4825, beautifully showcases the distinctive Tasmanian peat character from our Central Highland peat marsh. This whisky presents luscious ripe cherries and delicate honeysuckle, intertwined with notes of salted caramel fudge and earthy peat. The palate experiences sweet cocoa and smoked honey, while the aroma reveals a medley of stewed orchard fruits and rich, chewy marzipan. The finish offers dark chocolate-coated coffee beans, burnt orange compote, and a final embrace of Tasmanian floral peat.

Within Tasmania's vast peatlands, hidden among native shrubs, the Horned Orchid (Orthoceras strictum) blooms with rare, dark purple petals. This uncommon, sensitive flower, a threatened endemic species, epitomizes the delicate balance of Tasmania's unique ecosystem.

Our Cambridge Single Malt Whisky, matured in a Tawny Port cask number LD4961, is a tribute to this rare orchid. Displaying a deep dark hue, this floral peated Tasmanian whisky intertwines the earthy intensity of the peat with the sophisticated richness of Tawny Port. Expect a palate of rich fruity notes, a hint of spice, and a whisper of chocolate, creating a luxurious depth that resonates with the natural essence of Tasmania.

The EARTH Chapter of the Wilderness Collection is a tribute to this unique ecosystem, capturing the spirit of the land in every drop. A collection of three rare Tasmanian Single Casks celebrating our very own peat marsh and the endangered flora and fauna that call it home.

Single Cask, #LD4319 yielding just 198 bottles, heralds our distinctive Tasmanian peat highlighted by rich notes of honey, fresh pine, smoked chocolate, and zesty burnt orange.

Nestled deep within Tasmania’s wild terrain, lies our very own Central Highland Peat Marsh and is home to one of the island's most revered trees: the King Billy Pine. Once nearly driven to extinction for its timber, the King Billy Pine now stands as a symbol of the island’s enduring wilderness. This flagship of the Gondwana pines thrives in the same regions where our peat is harvested, infusing our whisky with the spirit of Tasmania’s ancient forests.

Matured in a Seppeltsfield Tawny cask, this single malt whisky evokes a sensory journey through the island’s rugged landscapes and heralds our unique Tasmanian peat and LARK’s unique post malt smoking process.

The nose reveals honeyed sweetness, fresh pine needles, and rich old oak, while maritime notes entwine with marmalade and forest floor aromas. The palate offers creamy milk chocolate, pipe smoke, bittersweet burnt orange zest, and buttery toast. The finish lingers with barley, tawny richness, and a delicate hint of silky custard.
