The Christmas Cask
Coming 21.10.2026
The 2026 Christmas Cask is the eighth Annual edition and is again a collaboration between three Tasmanian icons - LARK, multi-award-winning winery Frogmore Creek and beloved Hobart patisserie Jean-Pascal.
The story began in 2019 when Frogmore Creek red wine barrels were used to ferment surplus fruit mince pie jus from Jean-Pascal, giving excess ingredients a second life. The jus-seasoned casks are then passed to the LARK blending team, who use them to finish Single Malt Whisky previously matured in Sherry and Port casks.
The result is a distinctly Tasmanian expression of Christmas – one that brings together local produce, craft and an unconventional approach to whisky making. The partnership has continued every year since Christmas Cask’s first release, making No.125 one of LARK’s most anticipated festive traditions.
Fruit Mince Pie jus-seasoned red wine barrels. Plum pudding, brandy butter and mulled wine spice open the nose, layered with a hint of gingerbread. On the palate, buttery coconut shortbread and baked custard develop into spiced apple and caramel sauce, before a long finish of candied walnut and lingering orange cream.
From Tasmania’s wild beauty to your holiday table, crafted to be shared, enjoyed, and remembered.
