Symphony Nº1 represents a composition of exceptional Tasmanian single malt whiskies.

Crafted from a symphony of complementary casks, Head Distiller Chris Thomson has expertly woven the complexity of American oak bourbon with the balance of sherry and heavier depth of port to form a creamy, oily melody of flavours; a malt whisky that’s full of life from start to finish and carries the un-compromised signature of Lark Whisky—a Tasmanian icon.

Inspired by the teachings of the Godfather of Australian Whisky, our Head Distiller, Chris, has been distilling at Lark since 2007.

"When I go to a bar, I like to order several single malts and an empty glass. And I blend whiskies from all these different distilleries right there at the table. It feels like I’m painting a picture with a palette of different colours.

We’ve been talking about creating a blended malt here at Lark for a very long time. As far as I’m concerned, we’re amongst the few in Australia who can pull it off. We began our journey by looking through our portfolios, and were pleased to find that our Bothwell distillery was producing a whisky with some incredible pineapple and tropical notes - that’s really rare. We added a little bit of sherry cask for sweetness, and fortified for depth. There are notes of other whisky genres in there, too, like bourbon and rye. I wanted to create something that would feel relatable. Something that would feel like ‘home’ to anyone who’d experienced it."
