The artwork for “The Knotted Tree and Golden Lark” is a vibrant tapestry of symbolism and natural beauty, merging the cultural significance of the Lunar New Year with the pristine landscapes of Tasmania.
At the heart of the design is the Knotted Tree, born from a red oriental thread blown by southerly winds, that finds its place in Tasmania’s fertile soil. This tree, a beacon of happiness, prosperity, and love, blossoms with fruits and flowers synonymous with good fortune—rich oranges, delicate peonies, and cherry blossoms. The Tasmanian landscape, depicted in a modern elegant way, serves as the perfect backdrop, grounding the mystical elements in the real-world beauty of the island.
Menghui, the artist behind The Knotted Tree and Golden Lark, is a Chinese artist with a specialisation in illustration and VR animation, currently based in Helsinki. Her name, 梦慧 (Menghui), meaning “dream” and “wisdom,” reflects her artistic pursuit of creating fantastical worlds through a blend of imagination and wisdom.

TASTING NOTES
Matured in select small first-fill sherry and port casks, this Tasmanian whisky offers a rich tapestry of flavours to mark the occasion. Discover inviting aromas of nutmeg and pomegranate, with hints of smoke and praline. The silky palate unfolds with smooth layers of chocolate, ripe stone fruits, and a warm sherry richness, rounded out by the taste of dates and pecan. The finish is beautifully smooth, revealing brandy custard and poached pears with a gentle touch of Tasmanian highland peat. Best enjoyed neat or with a splash of water, this exquisite whisky is a toast to tradition and new moments shared.
AROMA
Elegant hints of nutmeg and pomegranate, with rich smoky marmalade, sticky praline and raspberry sponge cake.
PALATE
Tender stone fruits in harmony with supple dates, pecan pie and buttery chocolate covered hazelnuts, with an evolving sherried richness.
FINISH
Rounded and mellow, velvety brandy custard and poached pears, with a gentle echo of Tasmanian highland peat and Australian Tawny.
SENCHA BLOSSOM OLD FASHIONED
60ml LARK Lunar New Year Limited Edition
20ml Sencha Tea Syrup*
Stir all ingredients on ice. Strain into a tumbler over
a large ice block.
Express oil from orange zest over
drink.
Garnish with a star anise pod, enjoy.
*Brew a pot of green tea for seven minutes (approx
400ml).
Strain out tea leaves and combine 1 cup of
sugar.
TOASTED FORTUNE HIGHBALL
45ml LARK Lunar New Year Limited Edition
60ml Toasted Sesame Cordial*
Top with soda
Combine all ingredients in a tall glass with ice.
Garnish glass with toasted sesame seeds.
Enjoy.
*Heat a tablespoon of sesame seeds in a pan until golden and
fragrant.
Add 100ml of water, 50g caster sugar and a handful of
lemon zest and combine.
When cool, add a splash of brown rice
vinegar and a squeeze of lemon.
