This special single malt starts where our Central Highlands peat bog and the wild landscape meet.

REBELLION SINGLE MALT WHISKY 
Born from boundless imagination and an embrace of the unknown, this distinctive sun-kissed single malt dances with candied citrus, a balance of malt flavour fired up with a bittersweet edge. Vivacious and bright, it’s best enjoyed neat or over ice.

Crafted from a symphony of complementary casks, Head Distiller Chris Thomson has expertly woven the complexity of American oak bourbon with the balance of sherry and heavier depth of port to form a creamy, oily melody of flavours; a malt whisky that’s full of life from start to finish and carries the un-compromised signature of Lark Whisky—a Tasmanian icon.

Cask Strength 58%
Fondly referred to as "Liquid Gold" by whisky fans. Like Classic Cask, it leads with an oaky aroma of orange peel, butterscotch, cinnamon and nutmeg. Its huge port cask influence gives in an intense vanilla and Christmas cake sweetness as well as maple syrup and stewed fruits. There’s a hint of Tasmanian peat smoke that carries through to where toffee, spices and citrus shine through for a warm, smooth finish.

Master Distillers Olorosso | 43%: Our Master Distillers Oloroso Cask is a treacly single malt with an extravagant Oloroso-style sherry finish. Chris Thomson, our Oloroso-loving Master Distiller, meticulously selected a parcel of sherry casks for their balance and refinement before finishing them in outstanding Seppeltsfield winery Oloroso Casks.

Classic Cask | 43%: Handcrafted at our Coal Valley Distillery, Classic Cask 43% is a true labour of love from the second it leaves our stills to the moment the cork is popped. It features the citrus and butterscotch of the Lark house style with a hint of Tasmanian peat. A great balance of sweet, spicy and savoury elements make this the perfect dram for whisky lovers at all stages of their whisky-drinking journey.

Sherry Aged & Sherry Finished | 50.8%: One of Lark’s most beloved limited releases, our Sherry Sherry Release is bold yet balanced. Dried figs and glace orange slices on the nose give way to sticky sherry and sweet, spiced oak on the palate. The journey finishes with a long warm and woody finish reminiscent of dark chocolate and old saddle leather. Perfection in a glass.

Frogmore Creek Cuvée Cask | 46%: In collaboration with the fine folk at Tasmania’s Frogmore Creek Wines, this bright gold limited-release is bursting with summer vibrance. Coming into its own in French oak barrels that have played host to Frogmore Creek’s reserve Sparkling Cuvée, it’s filled with sweet honey, orange blossoms and roses on the nose and alive with the zip and zest of lemon and oak on the finish. A whisky that sings with orange oil, lemon drops, almonds and toast — it’s a delightful taste of lightweight luxury.

Rum Cask III | 55%: Our third Rum Cask release sees the triumphant return of a now classic Lark finish–a spectacular joining of Single Malt Whisky and our very own unique Tasmanian rum. The result is a wonderfully lifted and treacly single malt with notes of dark toffee, nutty oak and candied citrus, invoking romantic musings of the Wild West.
