CHRISTMAS CASK NO.125
The Christmas Cask Highball
The simplest cocktails are usually the best ones.
Three ingredients, one glass, no shaker required. The Christmas Cask Highball is the easiest way to get a festive drink in everyone's hands, and it takes about a minute to make. If you can pour and squeeze a lime, you're more than qualified.
Christmas Cask leads with spiced apple and caramel, then closes on a long, indulgent finish of candied walnut and orange cream. Ginger ale adds a little extra spice and some sparkle, and fresh lime keeps it all bright. The result is Christmas in a glass that still feels light enough for a long lunch.
WHAT YOU'LL NEED
The Recipe
Ingredients
50 mL LARK Christmas Cask
100-120 mL ginger ale, chilled, to top
Juice of half a lime
Clear ice cubes
Garnish: 1 maraschino cherry with stem
Method
1. Chill the glass. Fill a highball glass to the brim with large ice cubes.
2. Add the base. Pour 50 mL of Christmas Cask directly over the ice.
3. Top up. Slowly pour in the chilled ginger ale.
4. Add the lime. Give it a generous squeeze.
5. Stir. Lift gently with a bar spoon, just once, to combine without losing the fizz.
6. Garnish. Place a bright red cherry on top of the ice.
CHRISTMAS CHEERS
A Few Tips
Fill the glass right to the top with ice. More ice means slower dilution and a colder drink.
Chill your ginger ale ahead of time, pour slowly, and resist the urge to stir more than once.
And yes, the cherry is part of the recipe. It's the finishing touch that makes it look like Christmas. Made for long lunches and full tables.
