Pull up a seat at the place where it all began and uncover the story of the distillery that sparked a whisky renaissance in Australia. This guided 45 minute tasting brings the origins of LARK to life — from the fishing trip that inspired a movement to the world class single malt whiskies defining Tasmania today.
Led by one of our knowledgeable whisky hosts, you’ll explore three distinctive LARK single malts (including a rare museum release), while learning how craft, character, and innovation shaped the first modern Tasmanian single malt distillery.
Fuse Whisky Blending Experience — 3pm
Daily Fuse is a whisky experience unlike any other — an immersive, hands on blending session where you’ll create a bespoke 500ml bottle of your own LARK single malt whisky. Guided by a LARK whisky specialist, you’ll draw from a curated selection of our finest cask strength Tasmanian single malts, each chosen for its unique character, flavour profile, and story.
Across two hours in our Hobart cellar door, you’ll explore how ingredients, climate, cask type, and maturation shape whisky expression — and how a blend becomes more than the sum of its parts. This is your chance to create something truly personal, completely unrepeatable, and unmistakably Tasmanian.

What is the LARK Cellar Door?
It’s the original home of LARK, located on the Hobart waterfront. Formerly a distillery and bond store, it now showcases the full range of LARK whiskies with guided tastings, flights, and heritage exhibits.

Our address is 14 Davey Street, Hobart, Tasmania, right on the waterfront.
What can I taste or purchase?
Guests can enjoy curated tasting flights and purchase whiskies and gins across the full LARK and Forty Spotted range — including exclusive or hard to find releases.
Are bookings required?
No — general tastings and flights require no booking. Just walk in. For group bookings please reach out via our Events page and for daily experiences reservations are recommended.
Is there a space for large groups?
Yes — our new upstairs lounge is available for private groups, events, corporate tastings, and special celebrations.
