Tasmania’s Lark Distilling Co. is celebrating the festive season with the release of its seasonal single malt whisky, Christmas Cask II.
For the second year in a row, the distillery has partnered with renowned Tasmanian patisserie, Jean-Pascal Patisserie, to produce a festive whisky reminiscent of liquid plum pudding.
Patisserie founder, French pastry chef Jean-Pascal, hand-selects Tasmanian red wine casks to fill with fruit jus, used for making their Christmas fruit mince pies. These fresh, festive casks are then emptied and transported to Lark to be filled with seasonal single malt spirit.
“This year we chose single malt from Old Hobart Distillery. The spirit has really bright, refined floral notes that match perfectly with the rich spice from the casks. We call it ‘Christmas in a glass’ — the perfect accompaniment to a festive feast.” says Head Distiller and Blender Chris Thomson.
Notes of custard-covered plum pudding are on the nose, filled with raisins, cinnamon, nutmeg and orange peel. Citrus, spice and mulled wine warm the palate, blending into Tasmanian apples, cloves, cinnamon and a wisp of peat smoke. The finish will transport you to a Christmas family feast; with a satisfying dram in front of an open fire.
