The Australian Whisky Awards have once again announced their 2021 winners of whisky. Lark’s Christmas Cask Release III has taken home the title of whisky of the year as well as the highly esteemed Distillery of the Year. Our Head Distiller of 15 years, Chris Thomson was highly commended as Distiller of the Year and Lark founder Bill Lark took home Silver as Whisky Personality of the Year.
The Australian Whisky Awards are Australia’s “largest whisky democracy“ where thousands of whisky connoisseurs come together to as vote for their chosen drop of the year.
Lark’s triumphs and tributes earned over the years are the legacy of founder, Bill Lark who reinvigorated Tasmania’s whisky industry in 1992 and against all odds, crafted Tasmania’s very first single malt whisky. With 2022 marking Lark’s 30th Year Anniversary, our passionate distilling team continue to make some of the world’s most innovative and courageous single malt whisky.
Lark's Christmas Cask Release is a perennial favourite, brimming with all the nostalgic Christmas flavours to give you lashings of yule-tide joy.
Each year, our Head Distiller carefully selects Tasmanian red wine casks filled with the jus used by local artisan patisserie Jean Pascal for making their renowned Christmas fruit mince pies. These fresh, festive casks are then emptied and transported to Lark Distilling Co. where they are filled with our own seasonal spirit. The result is Christmas in a glass: nutmeg, cinnamon and vanilla custard on the nose give way to gingerbread, citrus peel and liquid plum pudding creating our merriest single malt to date.
Nose: Aromatic spice-led notes of clove, nutmeg, cinnamon, and dried citrus dance with the soft sweetness of stewed apples and vanilla custard.
Palate: The gentle spice and warmth of gingerbread meets the rich comfort of a Christmas plum pudding, citrus peel, sticky toffee sauce and all.
Finish: Long, complex and inviting.
