LARK Tasmanian Single Malt Whisky - Lunar New Year Limited Edition, “The Knotted Tree and Golden Lark,” is a tribute to both the cultural richness of the Lunar New Year and the natural beauty of Tasman. Matured in select small firstfill sherry and port casks, this Tasmanian whisky offers a rich tapestry of flavours to mark the occasion.

The design of this limited edition by Chinese Artist Menghui Huang showcases this enchanting story, with the Knotted Tree at the center, sprouting from the iconic Tasmanian landscape and blossoming with oranges, peonies, and cherry blossoms. A golden LARK bird, carrying a lantern, illuminates the scene embodying the joy and wonder of the Lunar New Year.

This is classic Cask in a pure form. Always blended on its own merits, giving the consumer an opportunity to discover and explore LARK at their preferred ABV, by breaking down with water at home or at the bar. Of course, as with all of our whiskies, it drinks way below the 58%ABV. Giving the whisky beginner an opportunity to experience a cask strength whisky without being overwhelmed by alcohol.

In the wilds of Tasmania’s deep west, amongst the sphagnum moss of Lake St Clair, hides a frog no bigger than a grape. A frog that will spend its entire life amongst the same moss that can be found at our peat marsh. The Moss Froglet; the smallest amphibian living amongst the moors, protecting the peat from which we draw our unique and complex range of flavours found in LARK Tasmanian Single Malt Whisky.

Our Cambridge Single Malt Whisky, matured in a Shiraz Single Cask Numbered LD4825, beautifully showcases the distinctive Tasmanian peat character from our Central Highland peat marsh. This whisky presents luscious ripe cherries and delicate honeysuckle, intertwined with notes of salted caramel fudge and earthy peat. The palate experiences sweet cocoa and smoked honey, while the aroma reveals a medley of stewed orchard fruits and rich, chewy marzipan. The finish offers dark chocolate-coated coffee beans, burnt orange compote, and a final embrace of Tasmanian floral peat.

Renowned for their scarcity and distinctive flavour profile, the Mizunara Rare Cask Series invites you to savour the timeless elegance and unparalleled richness of our craftsmanship, seamlessly blending the heart of Japan with the soul of Tasmania.

Mizunara white oak is highly prized because the cost of logs is quite high since it often takes 200 years or more for a Mizunara tree to mature enough before it can be harvested for cask barrels. The Japanese government also restricts the felling of Mizunara trees under the age of 80, making this type of Japanese oak even more difficult to come by for barrel production.

This necessary passage of time imbues the wood with unique qualities that, in turn, impart extraordinary characteristics to our whisky.

With enticing aromas of sandalwood and notes of fresh peaches and cream and a whisper of coconut, BATCH 001 showcases the exquisite complexity and depth of flavours imparted by Mizunara oak.

Crafted by Bill Lark during his tenure at a renowned Tasmanian distillery, this spirit sat with quiet conviction for two decades developing in both complexity and age under Bill’s expectant and nurturing eye. The result is a cask containing one of the oldest and most exclusive single malts to be released under the HOUSE of LARK name.
