          Gin Distillery Tasmania

Lark Distilling Co. is a whisky and gin distillery in Tasmania, and we've been in operation for over 30 years. Through our gin, we strive to promote our native Tasmanian botanicals. Our most popular gin includes the native pepperberry, also known as mountain pepper. By using local ingredients, we create a distinct taste you won't find in other gins.

Our passionate master distiller has crafted several gins, which are flavoured using many botanical elements. Our classic and flavoured gins have gone through an extensive development program before being good enough to release for your enjoyment. We are sure that once you try our gin, you’ll be back for each new release.

          What does gin taste like?

A high-quality gin distillery in Tasmania will have several different gins to sample. All these can have a slightly different flavour profile. But, by examining the tasting notes offered, you can get a feel for the flavours on offer. All gins will have a juniper base, which is complemented by different botanicals added by the master distiller.

In the classic gin from Lark Distillery, you'll find it includes an aroma of native Tasmanian pepperberries, combined with other mixed herbs and spices. When tasting the gin, you'll notice  spicy juniper, followed by sharp pepper. Our flavoured gin also includes pepperberries, with additional flavours from botanicals such as wild rose, oranges, pinot noir grapes, and Tasmanian bush honey. You can try these individually or buy a gift set containing two of your favourite gin styles.

The best way to discover the taste of gin is to try some yourself. When people are getting into gin, they often start with the classic style and then test out some flavoured versions. You can drink gin neat, but making a gin and tonic is the most popular method. A gin and tonic are made in a highball glass, with 40ml of gin and 125ml of tonic water. Pour these into your glass and give it a stir, then top off the drink with a few slices of lime. Serving gin as cold as possible is the best way to draw out the flavours.

What food goes well with gin?

When looking for a gin distillery in Tasmania, understanding what foods work well with their gin can help you find the perfect match. With a classic gin, you'll get intense flavours of juniper with lighter notes of other botanicals. With each gin style, you can examine the botanicals used and find a food pairing that compliments these. Most gin will work well with food, but finding that ultimate combination may take time and experience, which adds to the enjoyment of these delightful drinks.

Salmon and other seafood are near perfect with a fresh gin and tonic. The light flavours of seafood will not overpower the meal, and they'll work well together, allowing each other their moment in the sun. Try adding a light cream cheese sauce to the meal for a more indulgent meal. If you're having sashimi or sushi, you can use gin as a palate cleanser between courses. Gin also works very well with natural oysters and steamed mussels served with fresh lemon.

An excellent method for getting the best out of any gin is serving it with a well-crafted charcuterie board. You can add almost any combination of cured meats, seasonal berries, nuts, and cheese. With your cheese selection, try to keep to those that have a bold and robust flavour profile.

Almost any spicy food will work well with spirits from a high-quality gin distillery in Tasmania. If you like some chilli or other spices in your food, then eating it along with a cool glass of gin can make for the perfect combination. If you're feeling adventurous, you can even make some chilli-infused gin cocktails for the end of the evening.

Where can I buy the best gin near me?

Buying your gin directly from a gin distillery in Tasmania is the best method for getting the Australian spirits you need. While you can get gin from most local retail liquor stores, their selection is often minimal. This is because they only have a certain amount of shelf space, and they need to accommodate all their customers. Almost any commercially operating gin distillery in Tasmania will have a dedicated online store to sell their gin. You have access to their entire spirit catalogue by buying direct; this includes any limited or special event releases.

At Lark Distillery, we are known for producing high-quality Australian whisky, gin, and other liqueurs. When you visit the Lark Distillery online shop, you can find all our gin currently available, including new releases and our popular gin gift packs. After finding the perfect Australian gin for your home or office, make sure you look through all our Australian liqueurs. When you're buying a gift of spirits, you can consider a whisky tasting set. These sets are ideal for anyone interested in and seeking to learn about Tasmanian aged whisky.

When you order a gin or whisky delivery, we'll have everything packed and ready to ship out in less than a day. All orders are sent through Australia Post, and they'll take 3-5 days to arrive at metro locations or 4-10 days for regional areas. On arrival, you'll need to sign for the package and provide suitable identification. If you need any assistance in choosing from our quality Tasmanian gins, please feel free to contact our team, and we'll offer our personal choices for your consideration.
